breakfast at dinner

John was craving for an omelet so I decided to make it for dinner. I sautéed some garlic, onions, tomatoes, button mushrooms, Canadian bacon, and maple ham for the filling then topped it with grated extra sharp cheddar cheese. Didn't have a chance to take a picture before we devoured them:) Even if it was super simple, it hit the spot, especially with a glass of chilled white merlot:) It was, as a friend here says, "Mighty fine!"

But I did get a picture of dessert:) I made a low fat vanilla yogurt and triple berry parfait. Really easy, really inexpensive. I just layered thawed berries, yogurt, and apple cinnamon granola. Yum!
